Favourite Recipes

 

Peas 'n' Rice - a la Allen

1 small package of bacon (about 10 slices)
1 large onion, chopped
1 pair Chourico sausage, or any spicy sausage, cut into small pieces
2 cans Trappey's Blackeye Peas, with or without jalapeno
1 can (14oz) stewed or diced tomatoes.  Use two cans if you are making a bigger portion, or if you like a little more tomato.
1 1/2 cups rice

 

In a baking dish (approximately 14x16), put your can of tomatoes and blackeye peas, mix well.  DO NOT drain peas!

Cook bacon until crispy, then break into smallish pieces, when cooked.  Add to your tomato and blackeye peas.

Drain some of the bacon fat out of the pan and cook the onion and sausage.  When this is cooked, add to the mixture in the baking dish and mix well.

Add your rice last and, again, mix until well-blended.

Cook covered at 350º for approximately 45 - 55 minutes, or until liquid is gone.  Stir every now and then.

Great, served with BBQ chicken or ribs!
